AMAZING Gluten Free & Dairy Free Peanut Butter Cookies

Over the weekend I whipped up these absolutely amazing gluten free and dairy peanut butter cookies. They were VERY easy to make and have been the best gluten free and dairy free cookies I have made yet! So, here is the recipe, which adapted from this website.

1 cup firmly packed brown sugar
1/2 dairy free butter
1/2 cup creamy peanut butter
1 large egg
1 tsp. vanilla
1 1/2 cups gluten free flour - I always use this Pillsbury flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
sugar - to roll dough in

1 - Preheat oven to 350 degrees
2 - Combine brown sugar, butter and peanut butter in mixing bowl. Beat until well mixed. Add flour, baking powder, baking soda, and salt. Beat until well mixed.
3 - Roll dough into 1 1/2-inch balls; roll in sugar. Place 2 inches apart onto baking sheets lined with parchment paper; flatten balls in crisscross pattern with a fork. Bake 7-9 minutes or until edges are very lightly browned.
