Gluten Free Turkey Chili Recipe

A couple of weeks ago I had blood work done to test for a gluten allergy, as I had been having some stomach issues...I then got the wonderful results last week that I do indeed have a gluten allergy. So, I have been making new meals that are all gluten free and I am obsessed with this gluten free turkey chili. I also froze 2 containers of this chili to have later because I knew I couldn't eat it all within four days.

Ingredients: 2 cans of chili beans 1 packed of gluten free chili seasoning 1 can tomato sauce some ground turkey (I usually do 2 cups or more)
I start with browned ground turkey then I use a medium stock pan and mix all of the ingredients together and let them cook on low until beans are done.

Spinach Omelets To Go

Good evening. Today I am sharing my new favorite breakfast, they're great for busy mornings! They are super easy to help you meal prep for the week and are extremely simple to actually make. Once you make them you can store them in your refrigerator and then warm them up in your microwave for 30 seconds and enjoy a super fast, but healthy breakfast!

4 eggs
1/4 cup mozzarella cheese
1/2 cup spinach (I only used 1/2 of the spinach pictured above)
1 Tbsp salsa
1/3 cup coconut water (to make eggs more fluffy)

Mix all ingredients together (I cut up my spinach just to make things easier!). Greece muffin tins WELL. Cook for about 20ish minutes, I just kind of kept an eye on them. This recipe makes 6 muffins, I had 6 and one got eaten before I took the photo (real life!).

It's definitely still winter here in New York! The past two days have been snow days and it really hasn't been letting up. Food Diary | Part 2

Happy Tuesday! Today I am sharing my second food diary on Weight Watchers. A 7-day journal of my meals from over the last week. Since I started becoming more and more interested in healthy eating I have done extensive research into what I should and should not be eating and decided to share that!

DAY 8 (school day)

Wake Up (6:30 am) - 16 oz water
When I first get up in the morning I like to drink about 16 oz of water, which is great to start off your morning and your digestive system. Throughout your day you should be drinking half of your body weight in ounces of water. So I try to do that every day.

Breakfast (7:15 am) - 2 spinach egg muffins

Morning Snack (9:30 am) - apple slices with cinnamon

Lunch (11:30 am) - greek yogurt parfait, trail mix

Afternoon Snack (3:00 pm) - grapefuit

Dinner (6:00 pm) - GF vegetable soup

Food Diary | Part 1

Happy Monday! Today I am sharing a seven day food diary of everything I ate over a seven day period while on the Weight Watchers diet.

DAY 1 (school day)
Wake Up (6:30 am) - 16 oz water
When I first get up in the morning I like to drink about 16 oz of water, which is great to start off your morning and your digestive system. Throughout your day you should be drinking half of your body weight in ounces of water. So I try to do that every day.

Breakfast (7:15 am) - GF oatmeal and the Zen Tazo tea
This really fills me up for my long day ahead!

Morning Snack (9:30 am) - Trail mix
I make my own sort of trail mix and it's delicious!! I seriously do not like regular trail mix you buy but this is SO good. I did a whole post about it, which you can find here.

Lunch (11:30 am) - Greek yogurt, 2 turkey rolls, GF pretzels
I eat the Danon Oikos triple zero greek yogurt. "Turkey rolls" are just a piece of turkey rolled up, because I don't eat bread lol!

Today I am sharing the top 10 places on my travel bucket list! These are the places that I would like to visit in my lifetime, but they are not really in any particular order. Ever since I visited Spain last summer, all I have wanted to do was travel. It really impacted some of the experiences I would like to have during my lifetime.

Weight Watchers

I started a new diet!!! After trying the Whole30 diet, I realized that I needed something a little more realistic for my lifestlye. So, I decided to do a healthy Weight Watchers. While on this diet I am not indulging in ice cream or cake every day but however this is much more realistic.


This diet conforms more to your lifestyle the most. This is where you calculate the number of points, like calories that you get for a day and then you eat pretty much whatever you want as long as it is in that number of calories. This diet can be dangerous if you are not consuming a healthy amount of calories.
In two upcoming posts I will be sharing my food diaries from the Weight Watchers diet!

3. I discovered this amazing snack this month, which I shared here. It's kind of like trail mix, but tastes SO much better.

4. With the warmer weather lately in New York my current Starbucks order has been a peach green tea lemonade.

5. My favorite Netflix series has been Private Practice created by Shonda Rhimes, so if you like Grey's this is kind of a spin off from it and you will love it!
